    Keeping up with the summer festivities, this recipe is great for a family outing. For beverages, a personal favorite, fresh strawberry shakes! A yummy and refreshing treat for those hot summer days. If you try these recipes, let us know!

    Honey Chicken Skewers With Grilled-Corn Salad

    Ingredients

    • 1/2 cup ketchup
    • 2 tablespoons honey
    • 1 tablespoon Worcestershire sauce
    • 1 1/2 pounds boneless, skinless chicken breasts
    • kosher salt and pepper
    • canola oil, for the grill
    • 6 ears corn, shucked
    • 1 tablespoon unsalted butter, cut into pieces
    • 2 scallions, sliced

    Directions

    1. Place twenty 8-inch wooden skewers in water to soak. Heat grill to medium-high. In a small bowl, combine the ketchup, honey, and Worcestershire sauce; set aside.
    2. Slice the chicken lengthwise into twenty 1/2-inch-thick strips. Thread each strip onto a wooden skewer. Season with 1/4 teaspoon salt and 1/4 teaspoon pepper.
    3. Lightly oil the grill. Cook the chicken, turning occasionally, until cooked through, 6 to 8 minutes, basting with the ketchup mixture during the last 2 minutes of cooking.
    4. Meanwhile, grill the corn, turning occasionally, until slightly charred, 3 to 4 minutes. Cut the kernels off the cobs, place in a medium bowl, and toss with the butter, scallions, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Serve with the chicken.

    Fresh Strawberry Shake

    Ingredients

    • 3 cups fresh strawberries, hulled, plus extra unhulled berries for garnishing
    • 1 cup sugar
    • 2 3/4 cups heavy cream or half-and-half

    Directions

    1. Cut any large strawberries in half. Place the berries in a single layer on a baking sheet and freeze for 2 hours.
    2. In a blender, combine the sugar and cream or half-and-half. Blend for about 20 seconds or until the sugar dissolves. Add the frozen berries and purée. Divide the mixture among 4 glasses and garnish with the whole berries. Serve immediately.

    With the weekend upon us, the RT Family thought it would be great to let you know of family events happening in South Florida. Have a safe weekend everyone, and have fun!

    LEGO

    An exhibition of new work by LEGO artist Nathan Sawaya returns to the Art and Culture Center of Hollywood. The Replay exhibit will feature family-friendly sculptures made up exclusively of LEGO brick. Scheduled group tours will get a chance to create their own LEGO artworks. The exhibit runs through Aug. 15 from 10 a.m. to 5 p.m. Monday-Saturday and noon-4 p.m. Sundays. Admission: $7 for adults; $4 students, seniors and children ages 4 through 17; free for kids 3 and younger.

    The World of Giant Insects

    Animated robotic insects are enlarged 40 to 600 times their actual size. The exhibit includes a praying mantis, stick insect, beetles, caterpillar, and a locust. Other interactive displays include enlarged mosquitoes, honeybees, and a dragonfly. The exhibit runs through Aug. 1. The zoo is open daily 10 a.m.–5 p.m. Admission is $15.95 plus tax for adults; $11.95 plus tax for kids. Miami Metrozoo is a partner in the MomsMiami Summer Fun Pass. Mom (or Dad) gets in free with two paid admissions Monday-Friday through Aug. 31. Find the pass on the home page.

    Dino Island exhibit

    A prehistoric adventureland featuring robotic dinosaurs is the latest exhibit at the museum. See them walking, feeding, roaring, fighting, hatching and caring for their young. Plus an erupting volcano. Admission is $15 for adults and children, $12 for Florida Residents, free for children under 1 year. The exhibit runs through Jan. 2.     K’Nex: Building Thrill Rides exhibit

    This exhibit, sponsored by MomsMiami, gives kids the chance to learn about the science, math and technology behind thrill rides. It runs through Sept. 19.     We’re pretty big on taking the classics and giving them a new twist. This week our go-to recipe are grilled shrimp tacos. This is a great recipe to change things up a bit if you’re trying to break out of routine. Let us know what you think of the recipe! As a bonus, we even threw in a quick an easy recipe for a delicious dessert to finish the meal strong!

    Grilled Shrimp Tacos

    Ingredients

    • 1/2 cup sour cream
    • 3 tablespoons mayonnaise
    • 3 tablespoons milk
    • 1/2 teaspoon ground cumin
    • 1 1/2 pounds large shrimp, peeled
    • 3 tablespoons butter, melted
    • 2 large garlic cloves, minced
    • 4 limes, cut into quarters
    • 1/2 teaspoon kosher salt
    • 8 6-inch corn tortillas
    • 2 to 3 cups finely shredded green cabbage
    • bottled green tomatillo salsa

    Directions

    1. Whisk together the sour cream, mayonnaise, milk, and cumin. Set aside.
    2. Skewer the shrimp. (If using wood skewers, soak them in water for 10 minutes beforehand.) In a small bowl, combine the butter and garlic.
    3. Preheat a gas grill to high; adjust to medium after 15 minutes. (If cooking over charcoal, allow the coals to burn until they are covered with gray ash.)
    4. Brush the skewered shrimp with the garlic butter. Place them on the grill with the limes. Cook about 4 minutes on each side or until the shrimp are opaque and the limes are browned. Remove from grill. Lightly salt the shrimp.
    5. Grill the tortillas for 30 seconds on each side, then place inside a paper bag to keep warm.
    6. To serve, pull the shrimp off the skewers and divide them evenly among the tortillas. Top with the cabbage, sour cream sauce, tomatillo salsa, and a spritz of grilled lime.
    7. Rainy-day method: Broil the shrimp and limes about 4 inches from the heat using the Total Times above. Wrap the tortillas in foil and heat in a 350° F oven for 15 minutes, or wrap them in a napkin and microwave for 3 minutes
    Serves 8 as a first course or 4 as a main course Hands-On Time: 30m Total Time: 45m

    Vanilla-Chocolate Pudding Pops

    Ingredients

    • 2 cups Vanilla Pudding
    • 2 ounces bittersweet chocolate, melted

    Directions

    1. Divide the pudding into 2 small bowls while it’s still warm. Add the chocolate to one bowl and stir until well combined. Refrigerate both bowls of pudding, covered with plastic wrap, until chilled, about 30 minutes.
    2. Spoon 1/4 cup of the chocolate pudding into each of 4 ice-pop molds or four 4-ounce paper cups, and freeze for 10 minutes. Remove from freezer and top each with 1/4 cup of the vanilla pudding. Insert wooden sticks and freeze for 3 hours.

    The recipe for this week is great to do with your kids, something that is both quick and easy! Kids loving pizza is no secret, but here’s a great way to change it up a bit from your typical cheese pizza. Let us know if you try this recipe, or any of the others we’ve posted!

    Personal Pizzas

    Ingredients

    • 1 baguette or loaf Italian bread, halved lengthwise
    • 1/2 to 1 cup jarred pasta sauce
    • 1/8 pound Genoa salami, thinly sliced
    • 1 cup fresh spinach
    • 2/3 cup ricotta
    • 1 cup (4 ounces) shredded mozzarella
    • 1/2 cup (2 ounces) grated Parmesan

    Directions

    1. Heat oven to 425° F.
    2. Place the bread on a baking sheet, cut-side up. Spoon the sauce over the top.
    3. Place the salami on half the bread and place the spinach on the other half.
    4. Top with spoonfuls of ricotta and sprinkle with the mozzarella and Parmesan.
    5. Bake until the cheeses are melted, 5 to 7 minutes. Cut into pieces.
    Serves 4 Hands-On Time: 10m Total Time: 10m
    Also as a great quick dessert, chocolate croissants.

    Ingredients

    • 1 8-count tube refrigerated crescent rolls
    • 1/3 cup semisweet chocolate chips or chopped semisweet chocolate

    Directions

    1. Heat oven to 375° F.
    2. Unroll the dough and separate it into 8 triangles. Place about 10 chocolate chips on the bottom third of each triangle and roll the dough up around the chocolate.
    3. Transfer the croissants to a baking sheet (lined with parchment paper, if desired, for easier cleanup). Bake until golden brown, 12 to 14 minutes. Serve warm or at room temperature.
    Makes 8 croissants Hands-On Time: 05m Total Time: 20m

    The guys are back from their trip to Germany. They had a great time over there, meeting their fans at the convention as well as squeezing some time for sight seeing. A big thanks to Wildcat for having us over there! Take a look at some of the photos from the trip. Also look forward to some photos from their trip to Puerto Rico in the next post!
